Fresh Mango Pico de Gallo Recipe

Hey everyone, it’s Kevin here! Today I have an amazing fresh summertime recipe for mango pico de gallo!

After making my shrimp ceviche recipe and discovering how tasty such a simple mixture of vegetables could be, I started looking for similar recipes. Since I love mango and it’s summertime, I decided to make a mango pico de gallo recipe! It only uses 7 ingredients (all fresh!) and takes just 20 minutes to prepare.

What is Pico de Gallo?

Pico de gallo is also commonly known as salsa fresca. It’s different from your normal store-bought salsa because it isn’t meant to be as watery. It’s typically made by chopping tomatoes, onions, peppers, and other vegetables and then tossing with lime juice.

For this mango pico de gallo recipe, in addition to the traditional ingredients, I wanted to make mangoes the highlight because they are my favorite summertime fruit and complement the flavors in the rest of the salsa perfectly. One thing to remember though is that mangoes will start to get soft if left in the salsa for too long, so if you’re making the pico de gallo in advance, I recommend waiting to add the mangoes when you are ready to serve.

Pico de gallo can be eaten with anything that you would normally eat salsa with, from tortilla chips to tacos. This dish also goes very well with some fresh grilled mahi mahi!

Ingredients

As I already mentioned, I wanted to make the mangoes the highlight of this pico de gallo recipe. As such, I kept the rest of the recipe very traditional, using tomatoes, green bell pepper, jalapeno, red onion, and lime juice. Below are some other ingredients you can try out in this mango pico de gallo:

  • Cilantro: Cilantro is actually a common ingredient in pico de gallo, but I left it out of this recipe because Sierra isn’t the biggest fan of it. It’s a popular ingredient in a lot of Mexican dishes, and it adds a refreshing flavor.
  • Avocado: Avocado would add a nice mild flavor to complement the sweetness of the mangoes. If you do add avocado, make sure to add it right before serving so that it doesn’t get too mushy sitting in the salsa.
  • Cucumber: Cucumbers would make a nice crispy addition to this pico de gallo. Make sure to get a firm cucumber so it isn’t too mushy!

This fresh mango pico de gallo tastes so amazing with tortilla chips or on top of freshly grilled mahi mahi! It only takes 20 minutes to prep and is packed with healthy vegetables and fruit!

Ingredients

  • 1 bell pepper

  • 1 tomato

  • 1/2 red onion

  • 1 jalapeno

  • 1/4 teaspoon salt

  • 1 lime

  • 2 mangoes

  • Equipment
  • Large mixing bowl

Directions

  • Dice the bell pepper, tomato, red onion, and jalapenos and place in a large bowl. To learn how to prep these ingredients, check out the “How to De-Seed Peppers and Tomatoes” section in this recipemango pico de gallo in bowl
  • Add salt and squeeze the juice of one lime into the bowl and toss well
  • If preparing the salsa in advance, refrigerate until you are ready to serve it
  • Before serving, dice the mangoes into large chunks and toss well with the rest of the ingredients in the bowl. We add the mangoes just before serving so that they don’t get too mushy after sitting in the acidic lime juicemango pico de gallo everything
