I’m sharing with you my ultimate best scone recipe that I have developed after much experimentation. This simple recipe is both delicious and easy to make and will bring you 8 bite-sized, mouth-watering, savory scones.

Fresh out of the oven, these scones are crunchy on the outside but soft and moist on the inside. With a not-too-sweet taste and just a hint of salt, this is a perfect companion for your morning coffee. (Not a fan of breakfast? No problem, as they are sweet enough to serve as a light dessert to round out your dinner.)

Too bad English doesn’t have the right words to describe how these scones taste, but in Korean, we have a phrase called go-so-hae to describe this wonderful taste.

I like keeping my recipes simple but still create flavorful food from simplicity. Therefore, what I have is a simple, easy recipe for creating original-flavored scones, so don’t hesitate to chime in your unique ideas! I’ve tried with an extra tablespoon of chia seeds for protein and fiber, for a healthy, filling snack! You can also add raisins, fruits, or chocolate to change up the flavor. The possibilities are endless and up to you!

This crumbly scone recipe is easy to follow, and makes 8 salty-sweet mini scones that will have you wishing you made more.

Ingredients

  • 1 cup all-purpose flour (whole wheat flour is okay)

  • 4 tsp baking powder

  • 2 tbsp sugar (I used coconut sugar, but anything works)

  • 1/2 tsp salt (can use less if desired)

  • 3 tbsp unsalted butter, chilled (vegan substitutions can be made with solid coconut oil instead of butter)

  • 1 tsp cream cheese

  • 5 tbsp almond milk (regular, soy, coconut milk all work too)

  • Equipment
  • Large mixing bowl

  • Rubber spatula

  • Baking tray

Directions

  • Preheat oven to 375°F and prepare the baking tray
  • Slice the butter into little cubes to make it easier to mix into the flourdelicious mini scone recipe cut butter
  • Mix the butter into the dry ingredient mixture with your fingers. This is important so that the chilled butter will start melting from your body heat, but we don’t want it melt all the way!delicious mini scone recipe mixing butter into dry mixture
  • Just when chunks start to form in the dough, mix in the cream cheese. Cream cheese adds additional flavor to this
  • Start mixing in the milk with the spatula, 1tbsp at a time, until the flour starts coming together. The key is to not over-mix to the point where it becomes a soft dough mixture.   • Using your hands, make 8 small balls and place on a baking tray covered with parchment paper. Make sure you get the crumbs in your dough balls–this will be the best partdelicious mini scone recipe ready to bake
  • Bake in the oven for 30 minutes until surface is firm and you can’t easily poke a hole in it. The end result should be slightly golden browndelicious mini scone recipe closeup
  • Enjoy while hot! Or store them in the freezer and reheat in the oven for 3 minutes before eating
